I felt a little sad with post-vacation blues and needed something to cheer me up. I looked through pictures of dogs in WWI, pretty picnic set-ups, and pie recipes because who doesn’t love a good pie? And then I found it. Summer Shepherd’s Pie.
It may be in the high 90s in Virginia, but that certainly didn’t stop me from trying my first cottage pie recipe.
Shepherd’s Pie, also known as Cottage Pie (so cozy-sounding), combines two of my favorite things. Beef and mashed potatoes. And, of course, somehow, Instagram knew what would help perk me up. The creamy mashed potatoes were layered onto a yummy gravy concoction, and it looked easy! It was technically two recipes in one. I had my work cut out for me.
Then, I got to digging around in my pantry. This was the recipe I followed by The Wholesome Dish. I didn’t have Worcestershire sauce, but we did have A1 Sauce. We didn’t have frozen corn, but we did have frozen mixed vegetables. Everything else we had, or I picked up at Trader Joe’s (Do you love Root Beer as we do? Check this out)
The ground beef mixture was so easy to make. Mashing potatoes without a masher was tricky, but a whisk- an alternative works great.
I topped the lovely little creation with a light dusting of parmesan cheese. YUM. It smelled so good in the oven. WOW. WORTH IT.
